Dragon Boat Festival: choosing and enjoying rice dumplings

The original article marked the Dragon Boat Festival on 22 June 2023. Traditional rice dumplings can be high in fat, calories and glycaemic index. US-registered dietitian Law Ka Man noted that an ordinary savoury pork dumpling can contain the equivalent of about two and a half bowls of rice.

Who should take particular care? Because glutinous rice and mung beans are common ingredients, the dietitian advised caution for people with gastrointestinal disease, gout or kidney disease, and diabetes. The article lists a glycaemic index of 98 for glutinous rice compared with 84 for white rice, with values above 70 considered high. Sweet red-bean fillings also require attention.

Registered Chinese medicine practitioner Hung Kam Chau explained, from a traditional Chinese medicine perspective, that rich, heavy dumplings can impair digestion when eaten excessively. He highlighted three groups: people with diabetes, because sweet fillings can raise blood glucose; those with cardiovascular conditions, because meat- and seafood-rich fillings can add fat and protein and increase cardiac burden; and those with gastrointestinal conditions, because sticky, oily food may contribute to indigestion, bloating or recurrent gastritis and oesophagitis symptoms.

Choosing ingredients The dietitian suggested lean meat, red beans, mung beans, mushrooms and dried scallops for people with heart disease. Those limiting potassium because of kidney disease may need bean-free choices. People with existing illness should seek individual medical or dietetic advice.

Tea does not remove fat Eat smaller amounts if you have digestive problems, and pair dumplings with fibre-rich vegetables or fruit. Tea may feel soothing but does not cancel the fat or calories. Portion size remains important.

Six suggestions for balanced eating Serve vegetables alongside a dumpling eaten as a main meal. If it is a snack, reduce the grain portion at the main meal. Balance total fat intake for the day. The article suggests limiting savoury pork dumplings to half or one per day, treating chilled dumplings as snacks, and considering homemade versions with red or purple rice, cited as having glycaemic indices of 50 and 55. Even these versions require portion control.

Food safety Check use-by dates and that packaging is intact. Buy leaves from reliable suppliers and avoid unusually bright-green leaves or those with a chemical smell. Choose ingredients according to a low-fat, low-sugar, low-salt and high-fibre approach, such as beans, lean meat and mushrooms.

Eat purchased dumplings promptly. If not eating or cooking them immediately, keep them at 4°C or below, or follow the packaging instructions. Cool cooked dumplings and refrigerate in covered containers above raw food to avoid cross-contamination. Reheat thoroughly to a core temperature of at least 75°C, do not reheat more than once, and eat promptly after reheating. Use less soy sauce and sugar.
